This quick, vegan banana bread will have your kids begging you for more.
Ingredients
- 1 cup over-ripe mashed banana (2-3 bananas)
- 5 tbs water
- 2 tbs ground flax seed
- 1/3 cup vegan butter
- 2/3 cup granulated sugar (optional sub brown sugar)
- 1/4 cup soy milk (optional sub plant-milk of choice)
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp table salt
- 1/4 tsp nutmeg
- 3/4 cup chopped walnuts (allergy-friendly sub VEGAN chocolate chips)
Instructions
- Preheat oven to 350 F. Grease standard loaf pan with spray/oil of choice.
- Combine flax seed and water in a small bowl. Set aside to thicken.
- In a large mixing bowl, mash 2-3 over-ripe bananas until smooth. Ensure you have 1 cup of mashed bananas.
- In a small bowl, melt vegan butter. Stir melted butter into the mashed bananas.
- Combine sugar, soy milk, and flax mixture into the large bowl with bananas.
- Add flour to the banana mixture, stirring slowly.
- Sprinkle in salt and baking soda until all ingredients are combined.
- Add walnuts and/or vegan chocolate chips (optional) and fold until well combined.
- Scrape mixture evenly into greased loaf pan.
- Bake 40-50 minutes; checking internal consistency at 40 mins, and then 5 minutes thereafter until baked through.
