This quick, vegan banana bread will have your kids begging you for more.

Ingredients

  • 1 cup over-ripe mashed banana (2-3 bananas)
  • 5 tbs water
  • 2 tbs ground flax seed
  • 1/3 cup vegan butter
  • 2/3 cup granulated sugar (optional sub brown sugar)
  • 1/4 cup soy milk (optional sub plant-milk of choice)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp table salt
  • 1/4 tsp nutmeg
  • 3/4 cup chopped walnuts (allergy-friendly sub VEGAN chocolate chips)

Instructions

  1. Preheat oven to 350 F. Grease standard loaf pan with spray/oil of choice.
  2. Combine flax seed and water in a small bowl. Set aside to thicken.
  3. In a large mixing bowl, mash 2-3 over-ripe bananas until smooth. Ensure you have 1 cup of mashed bananas.
  4. In a small bowl, melt vegan butter. Stir melted butter into the mashed bananas.
  5. Combine sugar, soy milk, and flax mixture into the large bowl with bananas.
  6. Add flour to the banana mixture, stirring slowly.
  7. Sprinkle in salt and baking soda until all ingredients are combined.
  8. Add walnuts and/or vegan chocolate chips (optional) and fold until well combined.
  9. Scrape mixture evenly into greased loaf pan.
  10. Bake 40-50 minutes; checking internal consistency at 40 mins, and then 5 minutes thereafter until baked through.
