This fruit-filled oat bar recipe will provide plenty of long-lasting energy to power through the day.

Ingredients

  • 3 overripe bananas, mashed (or 1 1/2 cups mashed)
  • 1 flax egg (1 tbs ground flax seed, 3 tbs water combined)
  • 1/4 cup pure maple syrup
  • 2 cups rolled oats
  • 1/2 tsp cinnamon
  • 1 tbs chia seeds
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh, mixed berries
  • 1/4 cup flour

Instructions

  1. Preheat oven to 350F.
  2. In a small bowl, combine flax seed with water to form flax "egg". Let sit 10 min.
  3. If making a single batch, grease an 8x8 baking dish. If making a double batch, use a greased 9x13.
  4. In a large mixing bowl, stir together bananas, flax egg, and pure maple syrup.
  5. Add oats, flour, cinnamon, chia seed, baking soda, and salt. Mix to combine.
  6. Pour half of the batter into your prepared baking dish.
  7. Sprinkle berries over the top of the batter mixture.
  8. Pour remaining batter over the berries.
  9. Bake 30-35 minutes (40-45 minutes if double batch). Remove from oven when an inserted toothpick or fork comes out clean.
  10. Let cool 10 minutes, cut to desired size, and enjoy!
