This fruit-filled oat bar recipe will provide plenty of long-lasting energy to power through the day.
Ingredients
- 3 overripe bananas, mashed (or 1 1/2 cups mashed)
- 1 flax egg (1 tbs ground flax seed, 3 tbs water combined)
- 1/4 cup pure maple syrup
- 2 cups rolled oats
- 1/2 tsp cinnamon
- 1 tbs chia seeds
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh, mixed berries
- 1/4 cup flour
Instructions
- Preheat oven to 350F.
- In a small bowl, combine flax seed with water to form flax "egg". Let sit 10 min.
- If making a single batch, grease an 8x8 baking dish. If making a double batch, use a greased 9x13.
- In a large mixing bowl, stir together bananas, flax egg, and pure maple syrup.
- Add oats, flour, cinnamon, chia seed, baking soda, and salt. Mix to combine.
- Pour half of the batter into your prepared baking dish.
- Sprinkle berries over the top of the batter mixture.
- Pour remaining batter over the berries.
- Bake 30-35 minutes (40-45 minutes if double batch). Remove from oven when an inserted toothpick or fork comes out clean.
- Let cool 10 minutes, cut to desired size, and enjoy!
